Bordeaux Barrel-Aged Dark Chocolate

Virginia's Early Mountain Vineyards ages their red wine blends in French oak barrels from Bordeaux. Immediately after the winery emptied their 2016 Foothills vintage we filled a barrel with our freshly roasted cocoa. The absorption of the wine and wood aromas into the cocoa over several months yielded tart candied fruit notes with an earthy edge.
